Food is something that is very important to me. I premeditate a lot of what I eat, which involved lots of careful lists and planning to make sure things don't go bad before I get a chance to eat it. I absolutely hate wasting, and my notebooks are full of meal ideas and grocery lists based on what I currently have in the fridge and pantry (and my neighbor's garden!).

My go-to salad right now is simple, and it has all of my favorite flavors and textures packed into one.

Spinach, avocado, tomato and garlic hummus topped with cracked salt and pepper.

The thick dressing packs a punch as far as flavor goes, which I love. To me, spinach is normally pretty bland (unless it's cooked), so this is my way of getting all those good vitamins and antioxidants and still being able to enjoy myself.

It's also really delicious with chopped nuts on top. Right now I'm on an almond kick. I've also been having this weird toasted coconut craving... it seriously tastes good on everything.

If anyone has any awesome salad ideas, I'd love to hear them. I totally have a pinterest board dedicated solely to the art of quick summertime meals.

  1. I hate when my produce goes bad. I feel so sad and wasteful. My favorite salad is one that I had from an Eritrean restaurant which was very simple but tasty. It was simply romaine lettuce, coarsely chopped fresh jalapeƱos, red onions, tomatoes and goat feta with some sort of oil vinaigrette. It was amazing.
